Best recipes for BBQ Brisket

When choosing a Brisket for your Barbeque you may be wondering which recipes work best. For large cuts of meat which you can get from McKenzie Quality Meats, you should be considering how to get the most flavour and a wonderful texture. A Meat Rub or Barbecue Sauce works well by infusing layers of flavour into the BBQ Brisket as well as adding a caramelising effect. 

Barbeque Brisket Rub

This is a really simple Meat Rub which you can apply to your BBQ Brisket two to four hours before cooking. Mix together a quarter cup of Coarse Salt, a tablespoon each of Ground Black Pepper and Paprika then two teaspoons each of Cayenne Pepper, Dried Oregano, Garlic Powder and Cumin.  

Texas Barbeque Sauce

This recipe works really well by first massaging in the Barbeque Brisket Rub. 

To make the sauce itself, heat a tablespoon of Olive Oil in a frying pan then cook a finely chopped Onion with three crushed Garlic Cloves until soft. Add 500ml of Tomato Ketchup, 75ml of Lemon Juice, two tablespoons of Brown Sugar, a tablespoon of Malt Vinegar, two teaspoons of Dijon Mustard, and a teaspoon each of Chilli Flakes, Tabasco Sauce and Dried Thyme. Add a pinch of salt, mix it together, let it simmer for 20 minutes then blitz until smooth. Mix half of the sauce with 500ml of Beef Stock in a large roasting tin then add the Brisket, cover in foil and cook for 4-5 hours at 150c (130c fan) until tender. Place the Brisket on the barbeque at a low heat to char and close it with a lid if possible. Once charred all over, serve with the rest of the sauce.   

Chili Pepper Rub

If you want a bit more kick in your BBQ Brisket then Green Chili Peppers would be a welcome addition. Mix together a cup of Brown Sugar, two finely chopped Green Chili Peppers, half a cup of Chili Powder, a tablespoon of Coarse Salt then half a tablespoon each of Cayenne Pepper and Ground Black Pepper. You should apply this rub the day in advance before cooking your BBQ Brisket or even for 10-15 hours in a smoker. 

How to apply a Meat Rub to BBQ Brisket

Start by dry patting your BBQ Brisket with some kitchen paper before liberally sprinkling on your Meat Rub and massaging in until covered. Depending how much salt you use which dictate how long you leave the rub on; if you are using a lot you can put the BBQ Brisket straight into a smoker. However, if your Meat Rub is relatively light on salt then leave it for a few hours to let the spices and sugar sink in.
