Barbeques are great for carnivores yet you should also be expected to provide some alternatives for your meat hater mates. Once you have selected some prime cuts from McKenzie Quality Meats make room on your grill for these tasty veggie recipes.

Corn on the Cob

Remove the husk and all the stringy bits then brush the corn with some Olive Oil and grill the cobs on some direct heat. Drop the lid on them and cook for around 15 minutes, giving each cob a quarter turn every few minutes to make sure they’re evenly cooked.

Grilled Watermelon, Feta and Tomato Salad

Whisk together the juice and zest of one Lime with a quarter cup of Runny Honey and a tablespoon or Olive Oil then brush the mixture over inch-thick Watermelon wedges. Grill over a medium heat for around two minutes each side until there are visible grill marks and the fruit softens. Leave the wedges to cool then toss with some thin slices of Tomato and Feta, another tablespoon of Olive Oil, a teaspoon of Salt and half a teaspoon of Ground Black Pepper. 

Halloumi Burgers

This is an ideal recipe if you have some spare burger or brioche buns as you can still use typical burger accompaniments. Once the coals in your Barbeque are white hot, brush some thick Halloumi slices with Olive Oil then cook them on each side for a couple of minutes each until golden. These are great with slices of Tomato, Lettuce and some Tomato Salsa.

Grilled Pineapple

If you are struggling for dessert then try this simple Grilled Pineapple recipe as it’s so simple and a bit boozy. Mix three quarters of a cup of Tequila (you can substitute this for Rum if you prefer) with an equal amount of Brown Sugar then one and a half teaspoons each of Vanilla Extract and Ground Cinnamon. Once the sugar has dissolved, cut some inch-thick slices of Pineapple and place them on the grill then baste the boozy mix all over them. Make sure you turn the slices and these should take around ten minutes.
