The Restaurant Method involves both a pan and the oven which offers control over ensuring you cook the perfect steak. You will first want to preheat your oven to around 180°C and then preheat your pan on a medium-high heat. You should have your pan as hot as you dare before applying the steak, if you cannot hold your hand above the pan for more than a second it should be just right. Add some butter to the pan and swirl it around then sear each side of the steak for between two and five minutes. Use the butter to baste the steak and turn it until its toasty brown making sure that you sear the edges too. This may already be long enough for a rare to medium rare steak.

Depending on how you like your steak you should use a digital meat thermometer for optimum results. For instance, a very rare steak should have an internal temperature of 120°F/50°C, medium rare of 130°F/55°C and medium well of 150°F/65°C. Insert the thermometer into the centre of the steak through the edge and ensure it does not touch the fat or the pan itself.

If you want to edge your steak towards medium and medium well put it in the oven on a small rack over a baking sheet lined with tin foil. Effectively this will roast the steak until it is ready just the way you like it, which you can check with that meat thermometer.
